Fresh, local cow milk is one of the perks of living in the countryside.
Unpasteurized, unhomogenized milk is not legally for  sale in Virginia. Luckily, it is obtainable from farms that sell cow shares in their dairy farms. There are lots of beef cows in the fields covering Western Albermarle County, but not many dairy farms left.  Even fewer have co-share programs, but they are gaining popularity and hopefully will become more common in the future.
We are lucky to have a cow share from Nathan and Amy Vergin of Silky Cow Farm – silkycowfarm@gmail.com . Â Nathan interned with Joel Salatin of Polyface Farms , which was featured as an environmentally sustainable farm in the documentary film Food, Inc . Â Our fresh gallon of milk is delivered every Monday to a central location in Charlottesville.
The milk  from this happy  herd of cows is delicious, creamy, and full of beneficial enzymes.  To play it safe, we heat ours to 165 °F for 15 seconds to kill off any bacteria – it’s unlikely in a small, healthy herd but it can happen.  We cool the milk down by placing it in a bowl of ice and refrigerate it in quart mason jars.  This way the milk is heated far less than commercial milk and still has the benefits of being from locally raised, pasture grazed cows.
There are many uses for unpasteurized milk – our French winemaker turns his into cheese!  It’s easily made into yogurt that is fresh and full of live probiotics.  We use the Euro Cuisine Yogurt Maker , which has glass jars with  sturdy screw on lids – both are easily washed in the dishwasher.  You’ll also need a good thermometer, such as the ThermoWorks Thermapen .
Homemade Yogurt Recipe:
Heat 42 oz of milk to 175 °F for one to two minutes, whisking frequently. Take about a cup of the milk out, put in a small bowl and sprinkle in a yogurt starter.
Whisk to combine.
Add this mixture to the rest of the milk and whisk well.
